Im trying to recreate a game with a higher resolution. The resolution of the game I’m trying to recreate is twice the resolution of the simulator. I want to know if there is a way to change the resolution of the simulator so that I won’t have to half the quality of all of the sprites. Is this possible?

Unfortunately, no. You cannot change the simulators resolution.

I am currently facing the same probelem.
It would be really nice if there was the option for double the resolution and suitable hardware with a decent display.
