When doing more organic stuff I usually do rough sketches in pixels and then refine it. It’s also helpful to start with the basic linework before trying to add all the colour and shading.
It’s not easy but flipping the image can help you see the image “for the first time” which is useful for spotting problems with proportion. Also use reference images! Do not trust your brain to get an accurate image of anything lol. If you are struggling with photos, just look at other pixel art (but look at good ones)
