Why do we cook food?
Is it to honor the noble sacrifice of ingredients by transforming them into something safe, delicious, and actually edible? Or is it to play Russian roulette with salmonella while pretending a slimy, undercooked egg puddle is actually food?
Cooking exists to kill pathogens. Ever heard of salmonella? Itās that little dude youāre inviting to breakfast when you serve eggs that jiggle like a horror movie prop. You want ārunnyā? Try a faucet. Eggs shouldnāt be slimy and sloppy enough to look like mucus. Seriously, Iāll fight anyone who says runny yolks are a ātexture upgradeā.
Oh yeah, letās talk texture. A well-done egg is at least capable of holding its own in a sandwich without weeping all over the plate like a toddler denied dessert. Meanwhile, your āmediumā egg is what happens when someone forgets to set a timerāa half-hearted attempt at cooking thatās neither raw nor respectable. Itās the culinary equivalent of a participation trophy.
But hey, maybe Iām being unfair. Maybe itās about the danger. Do you take your chicken sashimi-style too? Sip mayonnaise straight from the jar? Thereās a time and place for risk-taking, and I believe itās called āa dare,ā not ābreakfast.ā
Enjoy your egg soup. Iāll be over here eating food that doesnāt require a waiver.
Sadly, Chimbroās facts[1] on eggs are accurate. Salmonella is killed instantly at 165 F (74 C), at which point, an egg is fully set. Egg yolks set at around 158 F (70 C).
That said ⦠over-medium eggs atop hashbrowns ⦠Iād eat those every day if I could. The eggs make a sauce that works beautifully with the hashbrowns. As 1 in 20,000 eggs may have salmonella in enough quantity to make one ill,[2] Iāll roll the dice.
In the U.S., commercial mayonnaise is pasteurized. Feel free to eat it straight from the jar to your heartās content. Well, until you eat enough to affect your cholesterol levels. Then stop.
