Oh I definitely still do. Even with a website full of awesome palettes, thereโs plenty of fiddling to be done.
When Iโm doing pixel art on my own from scratch, I like to pick 4 or so primary colors and then so a light or dark shade of each, usually taking into account things like color temperature and so on. Iโll use my last few spots for any in-betweens or striking detail colors that would help me illustrate, and voila.
Iโm also working on a program that automagically picks a palette based on the image you pass it! My goal is to make a 3d renderer that uses Hex colors for objects and textures but rasterizes them with a constantly adapting Makecode palette on the fly. I need to make more progress on my 3d renderer before I buckle down and work on it, but the thread can be found here
